Colorado Beer News is continually updated during the day (10am to 3pm) with new stories as they break, so stop back here often for all the latest. If you'd like to subscribe to this daily by email, sign-up here.

Paradox Beer Company (Woodland Park) - Paradox plans to make their beer a little differently than other breweries once they open. They plan on using square shaped fermenters. Most breweries use fermenters that are cylindrical in shape, closed tops, conical at the bottom. Theirs are short fat and square! They are designed to let the yeast take its own sweet time to make a more distinct, complex beer. After 5 to 7 days in the "square fermenter" they will transfer the beer for secondary fermentation into barrels (mostly wine barrels) then depending on the style, they will spend anywhere from 3 weeks to a year aging, then packaged into bottles. Their beers will be non filtered, non pasteurized and 100% bottle conditioned. Stay tuned for more on this upcoming brewery.

Cellarable for 10+ years." - In other news, check out this informative video about Avery's Barrel Room (from ooletree on YouTube):
